Thanksgiving
For the first time I ever I am flying during the Thanksgiving holidays. Images of Planes, Trains, and Automobiles flash through my head. Hopefully I will get there on time (or close) and in one piece.
The quarter is rushing by at an alarming pace. I can't believe how fast 10 weeks can go. I feel like just when I get used to the quarter, it is done. The positive being that I don't think I could handle the intensity for much longer than 10 weeks.
Nothing else too new to report. I have abandoned my cooking notes for a long time, but I have a recipe worth mentioning.
Honey Soy Sauce Chicken Legs....hmmmm...or to be more creative: Salty Sweet Sticky Goodness
6-8 skinless chicken legs
1/2 cup honey
2 tablespoon soy sauce
1/3 cup of water
salt and pepper
Mix honey, soy sauce, water, salt and pepper into a bowl. Toss chicken legs in mixture and then lay out on tinfoil in roasting pan. Bake at 350 for 30 minutes, basting every 10 minutes or so.
I served it with broccoli and to do for lemon rice (in rice cooker, add ingredients for rice + the juice of one lemon, 1 tablespoon of butter, and 3-4 cloves of garlic, make rice and then stir in 2-3 tablespoons of butter, then enjoy lemon creamy bliss). It was awesome.
